Hi,
I am setting up a shop for a pastry chef who sales his chocolate creations online. In France dark chocolate VAT is 5,5% and milk chocolate is 20%.
For easter, he sells products which are exactly the same in both chocolate. So I have used variant option for clients to select dark or milk chocolate BUT how do I apply the right amount of VAT to each variant?

You need to make two separate products that you using currently as in one product.
In this way the VAT will apply separate.
Thank you for your answer. I have set up seperate Tax Rates as Collections but I don’t see how I apply each Collection to the Variant. Or maybe it’s not the right way to do it? ?
Did you create separate product or each variants?
I have a product (for example an easter egg) which as 2 variants: one is dark chocolate, the other is milk chocolate. This product is in a Collection named “Chocolate” which has a VAT of 5,5% but I would like to apply a VAT of 20% to the Milk chocolate variant. Is it possible to apply a specific Collection (set up with 20% VAT) to this milk variant?
One last question sorry 
If a product is set in a (general) Collection (with a 5,5% VAT) so I can display all the products of this category together, but within the Collection I have products with a 20% VAT. I have created another collection using this amount and I apply this Collection to a product as well as the “general” one, which one will really be applied?
